Cranberry and Pistachio Biscotti

I had dried cranberries and Pistachios sitting in the freezer and a tried and tested recipe in my recipe book. Here is the result!

It is actually what we Indians call cake rusk. Italians make it in a different shape and call it Biscotti.

Well it works for me because it is easy to make and fat-free!


3 eggs

2.5 cups flour

.5 tsp baking powder

1 cup dried cranberries

1 cup Pistachios

1 cup sugar and pinch of salt


Sift together baking powder and flour and keep aside.

Beat eggs and sugar till light and fluffy, add the dry fruits, fold in the flour till it is all just combined.

Shape on the baking tray in the form of a log and bake for about 20 min. Take out of the oven and cut the log into strips and spread it on the tray again, bake further 10 min on either side.
