Mom in-law is visiting and she has been craving raisin bread… I, trying to be the dutiful DIL made many attempts to please her. Here is one of the efforts.

A slight variation from the classic Irish soda bread, here I added an egg to the recipe resulting in a softer cake like texture.

Flour – 1.5 cups

Butter – 100 gms

Egg – 1

Raisins – 1/2 cup

Baking soda – 1 tsp

Buttermilk – about 1 cup

Method:

Sieve together flour and baking soda.

Cut up cold butter into small pieces and rub into the flour using hands or a pastry cutter ( I even put everything into a blender and whisk once), till it looks like coarse meal. Add the raisins.

Mix the egg and half of the buttermilk together and beat with a fork.

Add the egg mixture to the flour and mix with a spatula till it all just comes together. If the liquid is too less add more buttermilk.

Bake till sides are golden.

This is a quick and easy cake to make for those with no patience or time..

The egg-less version of this is a huge hit with some of my vegetarian friends! The same recipe, just omit the egg and adjust the liquid accordingly!
